Meatless "Barbacoa"

This is a delicious recipe for veggie burgers that we tried out last weekend at a beach BBQ!  Enjoy your friends, families, and food this 4th of July weekend!

1 bag dried quinoa
1 bag dried lentils
1 cup bread crumbs
2 eggs
2 cloves garlic, chopped
6 tsp cumin powder
2/3 cup cilantro
1 squeezed lemon
1 cup walnut pieces
4 tsp olive oil
Dozen buns

Cook quinoa and lentils separately (rinse quinoa first to limit bitter taste).
Combine all ingredients in a bowl. Use a food processor or a strong friend to blend the ingredients. Get some extra hands to form 12-15 patties out of this mixture, brush them with olive oil and cook about 4 minutes on each side. Serve on a whole grain bun!
